Bingy Peanut Popcorn Squares

Who doesn't like peanut butter and popcorn?

If there are two things in this world I like they are peanut butter and popcorn. Give me a fresh jar of peanut butter and I am a happy camper. A large bowl of popcorn and Netflix and I am set for the evening!

So what about combining the two?

This being a VERY rare 4 day weekend for me (I am lucky if I get 1 day off on a regular weekend but that’s another story…), i can see some binge watching on Netflix. Sadly we are up to date on St. Pierre and the next Shetland is filming now I hear.

So here is my Bingy Peanut Popcorn Squares recipe…

Ingredients

  • 12 cups popped popcorn (unsalted or buttered)
  • 1 cup white sugar
  • 1 cup peanut butter (smooth or crunchy)
  • 3/4 cup corn syrup
  • 1/4 cup molasses
  • 1 tbsp vanilla

Instructions

  1. Combine in a heavy bottomed pot the sugar, peanut butter, corn syrup, molasses and vanilla.
  2. Bring mixture to a boil over medium heat, stirring frequently.
  3. Once boiling reduce heat and cook to a smooth consistency (about 3 – 5 minutes).
  4. Dump the popcorn into a LARGE mixing bowl.
  5. Drizzle the sugar etc. mixture over the popcorn.
  6. Using two large spoons mix all the ingredients together until the popcorn is evenly coated.
  7. Pour the mixture onto a large greased cookie sheet and press down firmly.
  8. Let cool until slightly warm to the touch and still fairly soft and then cut into squares and let cool completely.
  9. Enjoy!

Notes

  • You can substitute 1 cup of corn syrup for the corn syrup and molasses but the molasses gives the squares a nutty, rich flavour.
  • You could use honey versus corn syrup but watch your temperature as the mixture may boil much faster!
  • Don’t wait until the mixture has completely cooled before cutting as this yields fractured pieces that whiz around the kitchen. Of course Frieda doesn’t mind that either!
  • You can build on this recipe by adding such things as chocolate chips, raisins, peanuts or bits of fruit to the bowl with the popcorn. Just NO Liver please!
