We tend to barbecue a lot in the Summer time, after all who wants to heat up the kitchen when it is 35 degrees outside?

The perfect complement to barbecue in my mind is a cool Summer Salad (my Dad definitely rubbed off on me!). So here are a couple of my quick go to salads for hot days.

Tomato Onion Salad

Nothing could be simpler than this. The amounts are for three people but can be scaled up to feed an army if you like.

Ingredients:

  • 3 cups of Grape Tomatoes
  • 1/2 a large White Onion
  • 1/3 cup Sun-Dried Tomato or Balsamic Vinaigrette

Preparation:

  • Chop the tomatoes into crossways slices (usually two or three per tomato)
  • Thinly slice the onion into rings (thinner the better)
  • Toss together with the vinaigrette in a bowl

That’s it! Can be served immediately or I prefer to cover and refrigerate for an hour while I am playing with barbecue – your call!

Red Cabbage Carrot & Apple Slaw

Ingredients (for three healthy servings – can be multiplied):

  • 1/3 medium head of Red Cabbage
  • 1 medium to large Carrot
  • 1 eating apple (cored)
  • 1/3 cup Balsamic Vinaigrette

Preparation:

  • Julienne the Red Cabbage thin as possible
  • Peel and grate the Carrot
  • Slice and julienne the Apple
  • Toss all three in a serving bowl with the vinaigrette

That’s it! Can be served immediately or chilled in the refrigerator until supper time. Bonus – this slaw rocks when put on a burger as a condiment!
