Baked Chicken Curry with Onions, Mushrooms and Broccoli.

Funny how the weather goes, eh?

Last week it was blustery, cool and wet, kind of like October-November on the Wet Coast. The forecast for this weekend was a wee bit warmer, but cloudy and wet, just like a Wet Coast weekend!

This morning though, the sun came out and burned off the clouds and a glorious day was had, light breeze, plenty of sunshine and 24 degrees this afternoon!

Of course, as always, I had decided the dinner menu for tonight (just Sam and I here as Mom was closing at work). It had been awhile since we had had a baked chicken curry so the chicken was thawing on the counter even as the temperature started to soar. Ach well what’s a guy to do?

So braving the rapidly heating kitchen I put together one last curry bake, sweating like a stuck pig the whole time. So I guess this is the end of the season and time to turn off the oven, put away the crockpot and stop thinking about soups and stews until October!

That’s ok, I have a fresh jug of pink lemonade in the fridge and I can always use the air fryer oven if I get a craving for something roasted.
